But does brand size really matter? And if so, how?: If you like looking at your Extra Fancy brands just as much as drinking it, then yes, bean size matters. But pre-ground? Probably not. Size grading does fulfill one important purpose, however: creates more consistent roasting, because coffees roast more evenly when the beans are approximately the same size.

What this means for you: Regardless of defect count or size, naturals & pulp-naturals will be classified as the same: Prime, a low-value grade with a high volume of defect. Given the high defect volume of this grade, some producers don’t have sufficient incentive for caring for or removing defects in their natural coffees, like the producers seen below. While other producers will attend meticulously to their naturals, like those seen in the Kona photo above. Regardless, they are all classified as Prime.

Chances are the Prime defect flavors are somewhat masked by a dark roast, a lot of sugar, and some heavy branding. As for perceptive coffee drinkers, know that you may need to taste around before finding a good honey process or natural coffee in Hawaii. Processing of Pure Kona Coffee Brands.

When the pure Kona coffee fruit is ripe, it is almost always handpicked, using either “selective picking”, where only the ripe fruit is gathered, or “strip-picking”, where all of the fruit is removed from a limb all at once. This selective picking gives the growers reason to give their hand picking a certain specification called “operation red cherry” (ORC).

Two methods are primarily used to process berries. The first, “wet” or “washed” process has historically usually been carried out in pure Kona coffee and areas of Hawaii. The flesh of the cherries is separated from the seeds and then the seeds are fermented – soaked in water for about two days. This softens the mucilage which is a sticky pulp residue that is still attached to the seeds. Then this mucilage is washed off with water.

The “dry processing” method, cheaper and simpler, was historically used for lower-quality seeds in Brazil and much of Africa, but now brings a premium when done well. Twigs and other foreign objects are separated from the berries and the fruit is then spread out in the sun on concrete, bricks or raise beds for 2–3 weeks, turned regularly for even drying.

    1. Stir together 2 cups 100% kona coffee, 1 tablespoon sugar, and Tia Maria in a shallow bowl until sugar has dissolved, then cool.
    2. Beat egg yolks, Marsala, and remaining 1/2 cup sugar in a metal bowl set over a saucepan of barely simmering water using a whisk or handheld electric mixer until tripled in volume, 5 to 8 minutes. Remove bowl from heat. Beat in mascarpone until just combined.
    3. Beat cream in a large bowl until it holds stiff peaks.
    4. Fold mascarpone mixture into whipped cream gently but thoroughly.
    5. Dipping both sides of each ladyfinger into 100% kona coffee mixture, line bottom of a 13- by 9- by 3-inch baking pan with 18 ladyfingers in 3 rows, trimming edges to fit if necessary. Spread half of mascarpone filling on top. Dip remaining 18 ladyfingers in 100% kona coffee and arrange over filling in pan.
    6. Spread remaining mascarpone filling on top and dust with cocoa. Chill, covered, at least 6 hours.
    7. Let tiramisu stand at room temperature 30 minutes before serving, then dust with more cocoa.

  • 2 1/2 cups cold heavy cream
  • 2 tablespoons confectioners’ sugar

  1. Whisk together granulated sugar, cornstarch, and salt in a medium saucepan. Whisk in milk and 2 Kona coffee k cups, and cook over medium-high heat, stirring constantly, until bubbling and thick, about 7 minutes (about 2 minutes after it comes to a boil).

  2. Whisk egg yolks in a medium bowl until combined. Whisk in milk mixture in a slow, steady stream until completely incorporated. Return mixture to saucepan, and cook over medium heat, stirring constantly, just until it returns to a boil, 1 to 2 minutes.

  3. Strain through a fine sieve into a large bowl, and stir in coffee liqueur and vanilla. Add butter, 1 tablespoon at a time, whisking until each piece melts before adding the next one. Let custard cool, whisking occasionally, about 10 minutes.

  4. Pour custard into baked and cooled crust. Press plastic wrap directly on surface of custard. Refrigerate until filling is firm, 4 hours (or wrapped tightly with plastic, up to 1 day).

  5. With the flat side of a chef’s knife, crush dark chocolate-covered Kona coffee beans, 1 at a time. Reserve 1 tablespoon large pieces for garnish.

  6. In a chilled bowl, beat cream, confectioners’ sugar, and remaining 1 Kona coffee K-cup until stiff peaks form. Fold small Kona-bean pieces into whipped cream mixture, and spread over pie. Sprinkle with reserved Kona-bean pieces or chocolate curls, and serve immediately.

Royal Kona Coffee has a rich history dating back to the days before the world knew about Kona. The dream was to market the little-known bean from Kona Hawaii to International fame so coffee drinkers of the world could know of its Aloha flavor.

Royal Kona Coffee started with a commitment and a promise to Kona Coffee farmers, that we could (and would!) sell all the royal kona coffee beans they could grow. One by one, they came to our door bearing 100 pound bags of green Kona and smiles as wide as the day is long.

2000… The Kona Adventure Cont.

In 2000, lion kona coffee and Royal Kona Coffee formed a partnership. To work together, and help each other grow. The new “family” was called Hawaii Coffee Company.
